My favorite Diwali memory is devouring my moms famous Gulab Jamuns. She’d always serve them with chai to our guests, make everyone to-go boxes, and my most favorite way to gain a few extra pounds each year - with a scoop of vanilla ice cream each night after dinner, for a few weeks post Diwali! I finally attempted them on my own this year! Here’s this super easy recipe, you’ll never want store bought ones again! Ingredients: Dough Balls- 3 cups carnation milk powder 1 cup pancake mix 1 stick butter 1/2 cup milk (1/4 extra as you may need some more to get the right dough consistency) 1/2 tsp cardamom powder 1 tbsp rose water Chashni: 3 cup sugar 4.5 cup water 6-7 strands of Saffron 2 tbps rosewater 4 Cardamom pods Directions: 1. In one mixing bowl mix and knead ball ingredients into dough 2. Roll out into small balls 3. Heat oil at high, then lower and fry dough balls for 10-15 minutes (in batches) 4. While the oil is heating up, mix all of the chasni ingredients in a sauce pan and let it come to a boil for 10-15 minutes 5. Remove from the balls from oil, rest for 2 minutes 6. Remove chasni from heat, add fried balls and let them soak for 1-2 hours 7. Once they’ve soaked through - heat again bring the chasni and ball mix to a boil, remove and they’re ready to serve, warm, room temperature or cold!
